So Happy!

Hey! Right now I'm really excited and happy, i'll just cut to the chase and tell you all why....I got a job!!! Yay! I will be working at Red Robin. It is undecided if i'll start as a server or a hostess, but i'll find out Saturday when I do my orientation. Chauncey and I are so excited, I've been looking for a job but I haven't had a ton of luck and I hated getting turned down. So yeah, I finally have a job, and it feels great.

Also, I tried a new recipe last night. I love trying new recipes and experimenting with cooking. Last night I decided I really wanted breaded chicken. I've never cooked breaded chicken so I looked up some recipes for some tips. I found one recipe online that seemed like it would work.   • 4 boneless, skinless chicken breasts
  •  1 egg 
  •  1/2 cup milk 
  • 1 to 2 cups all-purpose flour 
  • cooking oil or melted Crisco 
  • 1/2 teaspoon salt 
  • 1/4 teaspoon ground black pepper 
  • 1/4 teaspoon paprika
  •  1/4 teaspoon white pepper

Beat together the egg and milk and set aside. Mix together the salt, black pepper, paprika and white pepper and sprinkle on both sides of chicken breasts.

Dredge the chicken breasts in the flour, shaking off the excess. Then dip each piece in the egg/milk mixture, then back in the flour. (You're going to get your hands messy here, so take your rings off.) Set chicken pieces aside on a piece of waxed paper.

I decided to do basically the same thing but I changed the flour mixture, instead of adding the salt, pepper, and paprika I decided to use poultry seasoning (it has a variety of spices in it), cajun seasoning and a hint of barbeque seasoning. It gave the breading the right amount of spice while not being too strong. I followed the rest of the recipe except for the Crisco part. I fried the chicken on a large frying pan with some oil and butter until the chicken was white all the way through. It was delicious, even Chauncey said he wanted to have it again even though he's not a huge fan of breaded things (I didn't know that until we started eating, otherwise I wouldn't have prepared the chicken that way.)
